Cucumber

Smoked salmon

sliced thinly

Caper- cream cheese spread

6 tablespoons cream cheese

1 tablespoon capers, drained and chopped

Makes about 6 tablespoons

Slice cucumber lengthwise into 20 thin slices with a mandoline or Japanese slicer. Trim the smoked salmon pieces to fit the cucumber slices.  Spread a cucumber slice with some caper- cream cheese spread and top with a slice of smoked salmon.  Starting at one end, roll the cucumber and salmon slices and secure with a toothpick.

For the caper-cream cheese spread:

Mix cream cheese and capers together in a bowl.  Refrigerate until ready to use.

Makes about 20 ribbons.

note: The spread can be made a day ahead and kept in the refrigerator.
