Ingredients:
1/2 lb beef steak; 1/2 cup shredded papaya; 1/2 cup shredded honeydew melon; 1/2 shredded apple, soaked in salty water before cooked to prevent discolouration; 1 shredded celery; 2 tbsp deep - fried shallot.
Marinade:
Dash of pepper; 1/2 tsp mung bean flour; 1 tbsp oil
Sauce ingredients:
2 tbsp fish sauce; 1/2 tbsp sugar; 2 tbsp fresh lemon juice; 2 shredded red chilli(optional).
Method:
1. Wash, wipe and shred beef steak. Marinate for 5 minutes.
2. Boil up enough water. Blanch beef until cooked. Drain well.
3. Dish beef, papaya, honeydew melon, apple and celery in a big bowl.
4. Blend sauce ingredients well. Pour and mix with all ingredients. Dish on plate. Sprinkle shall on top. Serve.
1. Way of deep - fry shallot: skin, slice and mix with salt. Rest on a colander for an hour. Deep - fry in warm oil on low heat until smoked.
2. Ready - made deep - fried shallot can be bought in those Asian local and spices foods shops.
