"과연 어떤 위스키가 좋은 위스키인가?"라는 질문에 가장 현명한 답은
"이 세상에 나쁜 술은 없다. 단지 당신과 맞지 않을뿐이다."라는 답이 가장 현명한 답일 것입니다.
그러나 이러한 답은 너무 뜬 구름 잡기식의 답안일 뿐 현실적인 답안이 될 수 없습니다.
그럼 가장 차선의 답은 "자기가 가진 색깔을 분명하게 하는 술이 가장 좋은 술이다."라고 말할 수 있을 것입니다.
이번 자료의 출발점은 회원분들 중 한 분께서 제게 어떤 싱글몰트가 좋냐라는 질문에서 출발하였습니다.
일반적으로 Single Malt Whisy하면 글렌피딕을 떠올리지만, 실제로 글렌피딕은 그렇게 까지 화려한 스포트라이트를
받을 정도의 술은 아닙니다. 그럼 어떤 싱글몰트가 가장 자신 색깔이 분명한가에 대한 물음에 해답을 찾기위해서는
최소한 3~4개 정도의 전혀 다른 특징을 가진 싱글몰트를 접한 후에야 눈을 뜨게 되실겁니다.
제가 그랬거든요... ㅋㅋ
그래서 시중에 유통되거나 재고품으로 돌아다니는 싱글몰트에 대한 전문가들의 평가를 한번 살펴보고
그들이 잡은 술의 특징을 같이 한번 느껴보시라는 의미에서 이번 자료를 작성하게 되었습니다.
위스키에 대한 테스팅 노트는 일부러 번역을 하지 않았습니다만
직접 한번 살펴보셔도 어려운 단어는 몇개 없습니다. 천천히 살펴보시고 참조 하시기 바랍니다.
술 이름 옆에 
마크는 유명한 위스키 잡지인 WHISKY誌의 실버메달(편집자 추천) 위스키입니다.
골든메달 위스키는 전에 제가 한번 올려드린 적이 있는데 골든메달은 레어 아이템이나 빈티지 성격의, 편집인들이
마신 술 중에 최고 였다면, 이번 것은 "반드시 마셔라" 정도의 술 일 것입니다.

스코틀랜드의 심장부를 흐르는 아벨라워와 스패이 강가에 위치하고, Ben Rinnes의 정상에 둘러싸여
아름다운 정경을 자랑하는 아벨라워 증류소는 1826년에 건축되어 위스키 생산을 시작하였습니다. 다시 말해 스코틀랜드에서
가장 오래된 역사를 자랑하는 증류소입니다.
그러나 더 의미있는 것은 St. Dunstan이 AD 960년 경에 이곳에서 위스키를 증류하기
시작하였다는 점을 더 자랑스럽게 지적합니다. Aberlour의 뜻은 "Mouth of the Chattering Burn"라는
의미의 Gaelic어입니다. 이곳에서 생산되는 제품은 확실히 복잡하고 매운 향으로 클래식향, 부케향으로 당신을 유혹할 것입니다.
이곳의 생산품중 수상 내역을 살펴보면 다음과 같습니다.

이 위스키를 처음 맛 보았을때의 느낌은 참 알싸합니다. 맵다는 표현이 어울릴것 같습니다.
알코올끼(소주처럼 역한 알코올끼가 아닙니다)도 매우 강해서 코를 찌르고 눈을 못 뜰 지경입니다

발베니는 발베니라는 14세기에 파괴된 성 지역에서 1892년에 설립되었습니다.
소유주는 Glenfiddich의 소유주와 동일 소유주인 W. Grant & Sons입니다.
발베니 증류소는 독특한 증류소입니다. 자신들이 직접 보리를 재배하여 그것을 가지고 직접 플로어 몰팅을 합니다.
이와 같이 발베니, 라프로익, 보모어등의 증류소에서 사용하는 맥아의 30%는 자기 소유의 농장에서 생산하고 있습니다.
물론 스프링뱅크의 경우는 100% 자체 농장에서 생산하는 보리를 사용합니다.
발베니 증류소 위치는 유명한 글렌피딕 증류소와 근접한 이웃으로, 동일한 물을 사용하여 위스키를 생산합니다.
동일한 물을 사용하고, 동일한 숙성 조건이라고 하지만, 제조 방법이 다르기 때문에
전혀 다른 성격의 싱글몰트가 생산됩니다. 
"Mains of Balvenie"란 이름의 발베니 소유의 보리밭

지금은 정식으로 유통이 되고 있지않지만 예전에 정식으로 유통이 되었고 시중에 재고품이 돌아다녀
맘만 먹으시면 쉽게 구하실수 있으실겁니다.
이런 좋은 위스키가 이제 더이상 정식유통되지 않는다는데 정말 아쉽습니다만
우리카페가 활성화되고 사람들의 인식이 좋아진다면 얼마든지 다시 수입되리라 믿어 의심치 않습니다.
보모어 증류소는 스코틀랜드에서 두번째로 오랜된 증류소이고 아일래이에서는 가장 오래된 증류소이며
세계적으로 가장 특색이 있는 싱글몰트를 생산하는 증류소로 스코틀랜드에서 가장 유명하고 명성있는 증류소입니다.
1779년에 상인이었던 심프슨이 Hebridean Island of Islay에 가장자리(Loch Indaal)에 위치하여 설립하였습니다.
Loch Indaal은 Islay섬의 수도와 같은 역활을 합니다. 보모어 증류소의 성장은 이지역의 성장과 같이 하였습니다.
증류소가 커지고 고용인구도 늘어나고 소득도 늘어나면서 주민의 수입도 늘어나면서 복지도 증가하였습니다.
다시말해 보모어 증류소는 이 지역민의 모든것이라고 해도 과언이 아닙니다.
보모어는 게릭어의 암초라는 뜻입니다. 창업 이래 수 차례 경영자가 바뀌었는데,
1963년에 스턴레이 모리슨사의 소유가 되어 현재에 이르고 있습니다..
모리슨사는 1970년 하이랜드 동부의 글렌가리오흐 증류소를 매수했으며, 로랜드의 오헨토샨 증류소도 산하에 가지고 있습니다.
그러다 일본의 산토리가 경영권을 소유한 이후(1994년), 증류소는 생산량 증가를 위해 근대화되었으며,
맛과 판매량 면에서도 시장의 요구를 만족하는 몰트 스카치를 공급할 수 있게 되었습니다.
동 증류소는 자신들이 소유하는 밭에서 생산되는 맥아도 일부 사용하고 있습니다.
또한 이 증류소는 맥아 가공용 공장을 확보해서 전통적 기법으로 몰트 발아를 직접 시행하고 있습니다.
발효죠는 스텐레스제와 소나무제를 사용, 증류기는 초류 2기, 재류 2기 합계 4기를 소유하고 있습니다.
이때 증류시에 사용하는 물은 증류서에서 8마일 떨어진 Laggan강에서 끌어와 사용하고 있습니다.
증류 가열 방법은 증기 증류 방식을 채용하고 있으며,
저장과 숙성에는 쉐리와 버본통(재이용 포함)을 적절하게 배분해서 보모어의 오리지날 맛을 만들어내고 있습니다.
또한 증류소 내에 있는 숙성고는 해면보다 4~5피트 낮은 곳이 있는데,
거기에서 숙성시킨 몰트 원액은 최고 수준의 싱글몰트가 된다고 합니다.
또한 증류소 내의 숙성고 이외에도 섬 안에 숙성고를 가지고 있습니다. 마지막 특이 사항은 현재 3번 창고는 증류하고
남은 잔열을 가지고 풀장으로 만들어 활용하고 있습니다.
음식은 손맛이라고 대부분의 증류소가 기계로 맥아를 뒤집어 주지만, 유명한 증류소는 사람의 손으로 합니다.

아직 우리나라에는 정식 수입되지 않고 있습니다만, 분위기상 조만간에 들어올거라 예상을 하고
우선 카페 회원님들과 함께 알아보고자 자료를 올립니다. 브루이치래딕은 아일래이의 서쪽에 있으며,
스카치 위스키의 공장으로는 최서단에 위치합니다.
1881년에 Robert, William and John Gourlay Harvey에 의해 창업되었으며, 여러번 경영진이 교체되었는데,
한때는 화이트 & 맥케이 디스킬러즈사가 소유하고 있었습니다.
화이트 & 맥케이사는 1960년에 발족한 이래 바로 5개의 몰트 증류소와 하나의 그레인 증류소를 매수했습니다.
그중 하나가 이 브루이치래딕입니다. 그러다가 1995년에 이 증류소는 잠정 휴업에 들어가게 되었습니다.
하지만 2000년에 전 Bowmore Master Distiller였던 Jim McEwan과
그의 친구들(전 Murray McDavid 의 Master distiller였던 Simon Coughlin과 Mark Reynier 그리고
전 Springbank의 Master distiller 였던Gordon Wright)에 의해
브루이치래딕은 르네상스를 맞이하게 됩니다. 이들은 어느 지분도 다른 기업에 속하지 않고
오직 자신들의 지분만으로 구성되어 있음을 자랑스럽게 생각합니다.
2001년 이 증류소에서는 다시 그들 만의 독립 기업으로 재탄생되어 제품생산을 하기 시작하였습니다.
브루이치래딕은 해변의 비탈길("brae by the shore")이라는 뜻으로 이 증류소 자체가 하나의 박물관입니다.
이곳의 장비들은 대부분 초창기 그대로의 장비들로 위스키를 생산하며 자신들의 생산공정에서 컴퓨터 공정이
없다는걸 자랑으로 여기고 있습니다.
2001년에 "Port Charlotte"라는 40ppm의 페놀 함유량을 가진 강한 피트 성격의 제품을 생산하였다가
몇달후에 10ppm의 페놀 함유량을 가진 라이트한 제품으로 바꾸었습니다.
브루이치래딕의 증류소의 석회벽은 항상 파도를 맞습니다.
그런 점에서는 같은 지역인 아일래이의 라프로익 증류소와 유사합니다.
그러나 라프로익처럼 의약품 냄새같은 독한 향기는 나지 않습니다...오히려 은은한 꽃내음이 당신을 맞이 할겁니다.
아마도 물을 내륙의 저수지에서 파이프로 끌어오고 있기 때문이 아닐까 추측되어집니다.
또한 라프로익은 처음 생산된 Malt 원액을 화이트 오크통에 속성시키지만
브루이치래딕은 다양한 통(Port, Madeira, Rum, Sherry, Bourbon)속에 다른 증류소들은 믿지 못할 정도의 짧은
기간에도 불구하고 다양한 풍미를 갖게 합니다.

브루이치래딕의 술병은 다른 아이래이의 위스키의 병과 매우 다릅니다.
다른 아이래이 위스키의 병이 와인병과 비슷하다면 이 브루이치래딕는 전통적인
아이래이의 술병모양에서 탈피했다는데 특징이 있습니다.

Palate - "Lightly creamy. Peaches. Summer fruits. Passion fruit. Zesty, almost effervescent. "
Finish - "The flavours meld, with a touch of sharpness. "
Comment - Not only the liveliness of youth but also the least wood influence.
The use of second-fill casks leaves the fruity flavours of Bruichladdich to express themselves more freely.

Nose - Very light and fresh. Floral, with crunchy green apple, verjus, lemon, fresh malt.
Palate - "Clean, zesty and direct. Apples, lanolin, cream.
A perky little number. A port finish version would be pinky and perky. "
Finish - Feisty and breezy.
Comment - Best as a wake-up call at 10am! .

여기서 잠깐 Islay 섬에 대해 알아 두실게 있습니다. Single Malt Whisky가 90년대 후반부터 세계적으로 인기가 끌면서
가장 그 정점에 서있는게 바로 Islay입니다. 처음 들으시는 분들고 있겠고 또한 위스키에 대한
조예가 깊으신분들은 아마 많이 아실겁니다. 그리고 많은 분들이 무라카미 하루끼의 책을 통해서 접하셨을 겁니다.
무라키미 하루끼의 책속에서 아일래이의 모습은 평온하고 한적한 시골마을로 묘사되어
자칫 따분한 동네로 인식되기 쉽습니다. 하지만 서두에서도 언급한거와 같이 싱글몰트에 대한 인식의 확산과 동경
그리고 활발해진 그들의 마케팅으로 인해 Islay 섬은 해마다 수 백만명의 관광객들이 찾아 가는 관광섬입니다.
각 아일래이의 증류소끼리 서로서로 관광객의 유치를 위해 노력하고(아일래이 페스티벌 개최등)
또한 증류소 관광과 연계하여, 골프 낚시 유람선 관광 스킨스쿠버 등 다양한 레저활동을 통해 관광객을 유치하는 관광지역입니다.
이에 한 몫하는 것이 빼어난 자연 경관 입니다. 그런 의미에서 아일래이의 사진 몇장 올립니다.

달모어라는 뜻은 원래 게일어 반, 고대 노르만어 반이 섞여 거대한 초원이란는 뜻입니다.
달모어 증류소는 1839년 Alexander Matheson에 의해 The Cromarty Firth라는 곳의 제방위에 설립되었습니다.
이곳의 지역이 비옥한 검은 토양으로 형성된 넓은 초원지대 입니다.
그래서 그런 연유로 달모어라는 이름이 생성되었습니다. 이 증류소는 Mackenzie가문이 1886년에 사들였는데,
이때 이 가문(clan)의 문양인 사슴머리(아무리 봐도 소머리인데...)위스키 생산품의 로고가 되었습니다.
이 증류소의 장인들은 대부분이 근교 주민들로 이루어졌으며, 화목한 분위기에서
최선을 다하여 위스키를 생산하고 있습니다.
달모어 위스키를 또한 가장 하일랜드 다운 싱글몰트라고 말하고 있습니다. 각 증류소마다 맛을 좌우하는 작은 비밀이 있는데,
달모어의 비밀은 Oloroso의 세리통과 아메리칸 위스키를 숙성시켰던 화이트 오크통안의 숙성입니다.
이 두개의 다른 통의 다른 유형들에 의해 생산된 달모어 원액 중에 12년에서 15년 사이의 원액을 섞어
추가 숙성(메링)시키며, 병입하기 일주일 전에 43도로 도수를 낮추어 병입합니다.
이것이 달모어의 품질을 높이는 방법입니다.

Nose - "Beautiful balance of tempting aromas. Gently fragrant peat-smoke. Orange marmalade, malt and sherry."
Palate - "Orange. Cream. Distinct aniseed. Honey. A very complex malt, with wonderfully combined flavours."
Finish - Almost chewy. Faint citrus zest. Smoky dryness. The faintest hint of the sea.
Comment - "Said to be married in sherry butts. In this instance, marriage certainly works."

Nose - "Outwardly flattish, but time and patience reveals life beyond the sherry - hints of cherry and oak."
Palate - "Mouth-filling and chewy. Lots of cream toffee. All the time there's a delicate, malty spice buzz"
Finish - "Very long and still milky, silky toffee with malt and vanilla arriving. A wave or two of sweet liquorice adds further richness."
Comment - Genuinely classy stuff from the 24 carat jewel in JBB's Scottish crown.

더 이상 설명이 필요 없는 싱글몰트 위스키입니다. 가장 상업적으로 성공한 싱글몰트이며
세계 곳곳에서 인기를 끌고 있습니다. 현재 우리나라에서도 많은 팬들을 가지고 있습니다만
개인적으로 평가하자면 싱글몰트계의 남작이나 자작 정도로 평가하고 싶습니다.
1886년 가을 월리암 그랜트(William Grant)는 스코틀랜드 하일랜드의 더프타운이란곳에서 글렌피딕 증류소를 세우고
마침내 1887년 크리스마스에 그 첫 글렌피딕을 증류하기 시작하였습니다.
Robbic Dhu의 물을 원액으로 하여 생산하지만 같은 물을 사용하여 만든 발베니와는 다른 위스키를 생산됩니다.
1963년 부터 싱글몰트위스키를 마켓팅하기 시작하여 싱글몰트의 붐을 일으킨 위스키입니다.
아직까지 여전히 독립가문 소유의 증류소에서 여전히 석탄을 연료로 사용하여
증류기를 운영하고 있다고 합니다. 해마다 수만명의 팬들이 이곳 증류소를 방문하려고 찾아가고 있습니다.
글렌피딕의 초록색병은 2가지 종류입니다. 하나는 GLENFIDDICH Special Reserve, no age statement, 이며 또 하나는 12년을 표기한 위스키입니다.
개인적으로 난에이징 제품을 구해서 마신적이 있는데 12년이 표기된 위스키보다 더 좋았던 걸로 기억합니다.
12년과 난에이징 제품을 구별하는 방법은 라벨을 자세히 보시면 됩니다.

Palate - "Fat and full, lots of malt concentrate. Initially sweet then some drier banana notes . Refreshing."
Finish - Some oaky notes.
Comment - "Rather simple, but very enjoyable – except for the slightly duff nose.

Finish - Pleasantly dry. Soothing freshness.
Comment - "Easy-going, fresh and fruity, but the palate does not reflect the liveliness of the nose

Comment - "Very clean, well-made and attractive

글렌모렌지 증류소는 하이랜드 북부, 로스 샤의 테인 마을에 1843년에 세워졌습니다.
증류소의 전신은 18세기 있었던 맥주 공장이었습니다. 이 증류소 근교는 양질의 물과 숯을 생산하는 것으로도 유명합니다.
1887년에 재건축되고, 1979년에 다시 개조되어 두개였던 증류기를 4개로 늘렸습니다. 글렌모렌지 증류소는 가장작은 규모의
싱글몰트 증류소입니다.
글렌모렌지의 싱글몰트는 "Sixteen Men of Tain" (tain은 스코틀랜드의 지명입니다) 이라는
16명의 장인들로만 근무를 하고있습니다. 그들은 하루에 단지 48배럴만을 생산하고 있습니다.
이렇게 작은 규모에서 생산되지만 글렌모렌지는 스코틀랜드에서 판매율 1위, 영국 전체에서는 판매율 2위, 전 세계 싱글몰트 중에서
판매량 3위를 기록한 싱글몰트입니다. 이런게 가능한 이유는 그들이 생산하는 원액은 전부 싱글몰트 위스키 용으로만 생산합니다.
다시 말해 그들이 생산한 위스키 원액은 한방울도 블랜딩용으로 사용되지 않습니다.
그럼에도 불구하고 영국내에서 성장율이 가장 빠른 증류소로 성장하고 있습니다.
증류소에서는 로스 샤 산의 보리만을 원료로 사용, 피트향을 매우 순하게 처리하고 있습니다.
또한 미네랄이 풍부한 이 증류소 소유의 수원인 The Tarlogie Springs에서 물을 끌어와
유명한 16ft 10inchs의 긴 증류기를 거쳐 엄선한 American Mountain Oak통에서 숙성을 시킵니다.
Glenmorangie의 뜻은 "Valley of The Great Tranquility(거대한 고요의 계곡)"라는 의미의 Gaelic어에서 따왔습니다.

Body - On the light side of medium, but with some viscosity.
Palate - Spicy, flowery, and malty-sweet tones that are creamy, almost ! buttery.
Finish - Long and rounded

Nose - Fresh, medium-bodied, steely with floral notes and a touch of peat.
Flavor - Light, fresh,slightly smoky with oily creaminess.

Nose - "Perhaps the most enigmatic aroma of them all: delicate yet assertive, sweeet yet dry, young yet oaky. A malty tone poem."
Palate - Flaky oakiness with a complex toastiness to the barley suggesting the lightest hint of smoke.
Finish - "Amazingly long, drying from the initial sweetness but with flaked almonds amid the oakier notes."
Comment - A great single malt: beautifully uncompromising from the first sniff to the last gulp.

맥켈란 증류소는 하이랜드에서 최초로 1824년에 면허를 획득한 이래에 집안 대에
걸친 장인정신으로 집안영지 근처의 강을 수원으로 하여 증류소를 운영하고 있습니다.
맥켈란 집안을 이해하기 위해서 가장 중요한 점은 그들이 얼마나 품질과 섬세함을 위하여
노력하는가를 전제로 하여야만이 이해 할 수 있습니다.
여전히 특별한 수공으로 만든 증류기(맥켈란의 특징은 증류기가 작은 대신에
증류기수-초기6개, 1965년에 12개, 1975년에 24개로 늘렸습니다-를 많이 운영하는게 특징입니다)에서
1970년대 후반까지 싱글몰트 위스키로는 출시하지 않고 블랜딩용 만으로 생산하였습니다.
70년후반부터 싱글몰트 위스키로 출시하였음에도 불구하고, 세계에서 가장 인정받는 좋은 위스키 중의 하나로
자리매김 하였습니다.
맥켈란은 위스키 원액으로 증류를 하여 세리오크통을 고집하는걸로 잘 알려져있습니다.
그들은 스페인산 Jerez 세리통으로만 숙성을 시킵니다.
양질의 Oloroso 와 양질의 Sherries를 3년 동안 숙성을 시켰던 통을 분해하지 않고

Palate - Firm. Glazed COOKIEs.
Finish - "Depth of tastiness. Both appetising and satisfying. Maltiness,
estery spiciness (ginger?) and just a hint of smoke (I could take more)."
Comment - "Can a malt be both popular and good? Of course,
but not if your taste is determined by elitism. (The same applies to musicians, writers, etc)."

Nose - "Big, with well-balanced sherried notes. Juicy malt, dried fruit
(date/fig) Madeira cake. Water brings the sherry notes forward: tea, rubber, oak, but it hasn’t taken over."
Palate - "Rich, weighty. Elegant. Orange and light wood."
Finish - "Long, oaky ! and winey."
Comment - Great balance between whisky and wood. To be honest I think
this is a better Macallan than the Exceptional Cask

with a slightly green edge and a nutty chewiness.
Finish - Long, rich and nutty
